Amontillado Cask Finish 2026

Amontillado! Fortunado was right; Amontillado Sherry is indeed rare and special, requiring years of careful biological and oxidative aging to create this phenomenal, fortified wine. Inspired by this layered complexity, we finished our 4-year-old straight rye whiskey for over 6 years in a 66-gallon amontillado sherry hogshead. Our signature whiskey’s classic spice profile develops alongside notes of brown sugar, dried apricots, and antique wood. Rich flavors of honey-dipped dates, cocoa, and hazelnut pralines build over a subtle savory earthiness, giving way to a dry finish with a gentle tannic grip (it’s to die for!).
